Erin is a recently qualified dietitian working in the UCC Department of Food & Nutritional Sciences as a Research Assistant. She undertook her clinical training in dietetics in the areas of radiation and surgical oncology at St. James’ Hospital, Dublin and completed her undergraduate thesis at the International Agency for Research on Cancer, Lyon where she studied the associations between inflammatory cytokines and body fat distribution in healthy controls as part of the European Prospective Investigation into Cancer and Nutrition.
Her current work is primarily on malnutrition in cancer, including prospective study of body composition changes throughout the cancer journey, cross-sectional study into appetite & sensory changes during chemotherapy as well as randomised controlled trials testing novel interventions to combat anorexia and cachexia.
